This recipe sounds lovely, but...

You really expect me to run my natural gas-fueled oven for four to six hours? I'm all for slow food, but this runs contrary to my environmental common sense.

Interesting...

It's like a slow-cooked version of Marcella Hazan's baked tomato sauce. I may have to try this!

Maybe this would be a job for a solar oven?

Do you think that a solar oven would work with this recipe? It would be interesting to experiment with.

2 answers
G - well I'd suggest getting an electric oven, they are more efficient and less expensive. But in the meantime this drying process can also be done the old fashioned way, something I wrote about here

MTV - I am not very familiar with the solar ovens, but if you can control the temperature adequately I don't see why not. Meanwhile the article noted above may also be of help to you.

Please keep this to yourself

Please keep the slow food ideology to yourself okay? Don't even think of exporting it to people who need to work to make a living.

Also keep the solar ovens to yourself, as a hobby toy. Don't even think of the obscene idea to export them to Africa. They don't work.

For the rest: lovely recipes.

What's your point?

Jonas -

Are you implying that I don't have to work for a living? If that's true I hope you'll inform my mortgage company. And Slow Food's "exporting," as you put it, of its ideas has been warmly received in over 150 countries. Fine if you don't like the ideas of Good, Clean & Fair food, but that's certainly not reason enough not to share them with others.

Glad you like the recipes.
