Food Preservation
I am so happy to hear more people talking about the important role of food preservation for our future food security. I grew up canning a lot with my mom, but I didn't realize its greater environmental significance until recently, I just thought it was one of those things we did because there was extra food around or to save money or something like that. After living away from home for a few years, I now realize that it is also a way of taking responsibility for our consumption. Whether it's growing your own food, or preserving things that are in season from local farmer's markets, it's so important that we all take a more active role in the food that we eat.

This was so interesting to read! I had no idea that the mostly flavorless "Delicious" apples we're now so accustomed to had such an impressive history. I've been paying a lot more attention to different heirloom apple varieties since last month when I did a short film on traditional cider making in Upstate New York. Now when I go to farmer's markets I make it a point of learning all of the names of my favorite apples. As a child, I used to always say I wanted to design a city where all the plants are edible and fruit bearing. I will admit that it is a bit utopic, but reading this gave me a mini-resurgence of faith.
It's true about the pesticides though. In my city there wouldn't be any pesticides.
