Where's Rick Bayless?
I would have added Rick Bayless, chef/owner of Frontera Grill and Topolobampo in Chicago, Illinois. First he is an advocate of slow foods, helping others in the community, and preserving traditions in cooking (mostly Mexican). But he also buys locally from Chicago's green markets, meats and poultry from nearby farms (which he lists on the menu) and even grows stuff he uses in the restaurant in his own back yard! He lives in Chicago, not verdant farm land, so that to me is pretty amazing. Just my 2 cents (all I have).
